Fried “Cryptic” zucchini squash recipe

Pittsboro, NC – Shopping for zucchini squash won’t always be as exciting as my 2011 experience, but be assured that they are always good eating, no matter how prepared. And, I am willing to bet that all grocery stores in Chatham county sell them. The wonderful thing is, they are always fresh tasting.

Here is my recipe for fried “Cryptic” zucchini squash:

In a seasoned iron skillet, melt enough shortening to cover bottom. Cut up zucchini in bite size pieces. Cut up about half cup of onions. Add both to hot skillet – stir to keep from burning. Sprinkle well with yellow corn grits (Chatham Marketplace), add garlic powder and a little salt to taste. Stir and cook until crisp and browned.

Serve over plain rice. Top with lite soy sauce and parmesan cheese. A piece of fried catfish and fruit salad adds to the sensation. So does (fresh) cranberry sauce.
